Locally sourced from Diaper Poultry of Suffolk, we use an extra-large skin on chicken breast to ensure a juicy and tender final product, which we dry cure overnight in a blend of sea salt and a secret mix of spices and demerara sugar. Then smoked and cooked for around 6 hours, resulting in a golden coloured, smoky flavoured, and wonderfully succulent chicken breast. Perfect served as part of a warm salad or as the final ingredient to a topped jacket potato delight.
